Artisan Paccheri Rigati made from 100% certified Tuscan durum wheat, bronze-cut and slow-dried at low temperature. The large format, rough surface and dense core make them perfect for holding rich sauces — from wild boar ragù to baked pasta dishes.
🌾 What makes these Paccheri different
Industrial pasta is smooth, uniform, odourless. These Paccheri give themselves away the moment you open the bag: the scent of hand-worked semolina is the first answer. In cooking, the difference is even more pronounced — they hold their texture, don't stick together, absorb the sauce without breaking down.
The raw material is everything: durum wheat grown in Tuscany by a certified network of local farmers, worked with spring water, drawn through bronze dies to create that roughness no teflon tool can replicate. Slow drying at low temperature preserves the proteins and the flavour of the semolina — the high heat of industrial cycles destroys both.

🍝 How to cook Paccheri Rigati
Cooking time: plenty of salted boiling water, 14–16 minutes. Taste before draining — artisan pasta has variable cooking times compared to industrial. Drain al dente and finish for one minute in the sauce.
