🌡️ How to get the best out of this cheese
Truffle expresses its complete aromatic bouquet only at the right temperature. Remove from the fridge at least 20-25 minutes before serving. At 4°C the paste is almost aromatically inexpressive. At 16-18°C room temperature, the Tuber Aestivum flakes release the full bouquet — earthy, mushroom-like, elegant. After opening the vacuum seal, allow 10 minutes of airing before tasting.
Cut into 8-10mm slices with a smooth-bladed knife — the soft paste cuts easily and reveals the brown truffle flakes in the white core. Always remove the rind before serving — it is not edible (E202, E235 treatment).
In the kitchen: always add away from direct heat — stir into risotto off the heat, into omelette with the hob off, onto hot pasta already plated. Excessive heat volatilises the aromas of Tuber Aestivum.
