🔥 How to Cook Bistecca Fiorentina the Right Way

The Fiorentina has unwritten rules that every Florentine knows by heart. Following them is the only way not to waste it.

The temperature. Remove from the refrigerator at least 60 minutes before cooking. A Fiorentina cold from the fridge cooks badly — the outside burns while the fillet stays cold. At room temperature the cooking is even from bone to edge.

Live charcoal — not gas. The Tuscan Fiorentina is cooked on live wood or charcoal embers, never on a gas grill. High embers without active flames is the ideal condition.

The timings. For a 1kg Fiorentina 3cm thick: 5 minutes per side over high embers, then 3-4 minutes standing upright on the bone. The fillet is always more cooked than the sirloin — that is in the nature of the cut. Rare is the only correct cooking according to Tuscan tradition.

The salt. Generous coarse salt only after cooking, never before. Before it draws moisture from the meat. After it dissolves in the hot fat and forms the flavourful crust that is the hallmark of a well-made Fiorentina.

The rest. 4-5 minutes on a wooden board before serving. The juices redistribute through the meat.

The Tuscan golden rule: live embers, rare, coarse salt after, rest. Anyone who adds more is doing it wrong.
