Tuscan Ribeye Steak Bone-In — Directly from Tuscany | Buy Online | Salumeria Toscana

Buy the Tuscan Ribeye Steak directly from Salumeria Toscana — côte de bœuf from adult Italian beef, rib cut with bone, selected by the Tuscan artisan butchery. Generous thickness, natural surface fat, intense aromatic profile typical of mature beef. Available in 1kg, 1.2kg and 1.4kg. Vacuum-sealed, delivered at controlled temperature to the UK and Europe.

🥩 Why This Steak is Different

The Tuscan ribeye is not an ordinary cut — it is the bone-in côte de bœuf, the cut that Tuscan butchers reserve for customers who know what they are buying.

The rib cut. The ribeye is taken from the front section of the loin between the vertebrae and the ribs. The bone stays attached to the meat — not an aesthetic choice but a technical one. During cooking the bone conducts heat evenly into the interior of the cut and releases the marrow, which permeates the surrounding meat with deep aromas that no boneless cut can replicate. Tuscan steak is always cooked on the bone.

The mature beef. Adult beef has a more developed muscle structure and a thicker surface fat than veal. This produces a bolder, rounder flavour with an aromatic persistence that expresses itself particularly on a live charcoal fire. It is the meat Tuscans have always eaten — not the tender veal of northern Europe, but the flavourful mature beef of the farming tradition.

The artisan selection. No middlemen, no aggregator platforms. The steak comes from Tuscan producers personally selected by Salumeria Toscana and arrives directly to your door — guaranteed cold chain, certified freshness.

🔥 How to Cook the Tuscan Ribeye at Its Best

The Tuscan ribeye on the fire is a ritual — not a recipe. A few rules, all essential.

Temperature before cooking. Remove from the refrigerator at least 45-60 minutes before. A thick bone-in steak cold from the fridge cooks badly: the outside burns before the inside reaches the right temperature. At room temperature the cooking is even from edge to bone.

Live charcoal — not gas. The Tuscan steak belongs on live wood or charcoal embers. The smoke of the fire enters the meat during cooking and adds an aromatic dimension that gas cannot provide. High embers, no flames.

Timings. For a 1kg ribeye with 3-4cm thickness: 5-6 minutes per side over high embers for rare. For medium add 2 minutes per side. Stand it on the bone for 2-3 minutes at the end — this cooks the bone-side which always stays rarer.

The salt — only after. Generous coarse salt only after cooking, never before. Salt before draws moisture from the meat. After cooking the coarse salt dissolves in the hot fat and forms the flavourful crust that is the hallmark of the traditional Tuscan steak.

The rest. 3-4 minutes on a wooden board before serving. The juices redistribute through the meat.

The golden rule: live embers, coarse salt after, rest. Nothing else.
