Tuscan Grass-Fed Beef Fillet — Directly from Tuscany | Buy Online | Salumeria Toscana
Buy Tuscan Grass-Fed Beef Fillet directly from Salumeria Toscana — selected Italian beef from pasture-raised cattle on Tuscan meadows. The most tender cut of the animal: tender, juicy, with a clean and assertive aromatic profile that expresses itself best with simple cooking. 250g, vacuum-sealed, delivered at controlled temperature to the UK and Europe.
🥩 Why This Beef Fillet is Different
The quality of the fillet starts with the farming — and this Tuscan adult beef is born and raised on Italian pastures, with a natural diet of grass and seasonal forage.
Grass-fed cattle produce meat with a more intense and complex aromatic profile than intensively farmed beef: less surface fat, denser muscle fibres, a real beef flavour that needs no marinades or masking to come through.
The fillet is the most tender cut of the animal — taken from the lower loin, free of connective tissue, with a muscle structure that guarantees tenderness even with quick cooking. In grass-fed adult beef this cut reaches a depth of flavour that veal simply cannot deliver.
The selection is artisan and direct — no middlemen, no aggregator platforms. The product comes from Tuscan producers personally selected by Salumeria Toscana.

🔥 How to Cook Tuscan Grass-Fed Beef Fillet at Its Best
Grass-fed beef fillet rewards simplicity. The less you intervene, the more the meat expresses its character.
Temperature before cooking. Remove from the refrigerator at least 30 minutes before cooking. Fridge-cold meat cooks unevenly. At room temperature the cooking is uniform.
In the pan — the most precise method. Cast iron or steel pan brought to maximum heat. A drizzle of Tuscan extra virgin olive oil on the meat, not in the pan. 2 minutes per side for rare, 3 minutes for medium. Rest 2 minutes before cutting. Coarse salt and black pepper only at the end.
On the grill. Glowing grate, high heat, short time, obligatory resting. Grass-fed beef has less surface fat — quick cooking is essential to avoid drying out the meat.
Carpaccio. Pounded paper-thin raw with rocket, shards of Cave-Aged Pecorino Stagionato, Tuscan extra virgin olive oil and lemon. The natural tenderness of the fillet makes it outstanding raw.
The golden rule: salt, pepper, Tuscan extra virgin olive oil. The meat does the rest.

🧠 FAQ — Tuscan Grass-Fed Beef Fillet
What is the Tuscan Grass-Fed Beef Fillet? The most tender cut from adult Italian pasture-raised cattle on Tuscan meadows. 250g fillet, vacuum-sealed, delivered at controlled temperature directly from Tuscany.
What is the difference between this fillet and the Chianina IGP fillet? The Chianina Beef Fillet IGP VBAC comes from the Chianina breed with a European certification guaranteeing breed, rearing territory and production method. This Tuscan Grass-Fed Beef Fillet is artisan-selected national Italian pasture-raised beef without a specific breed certification — solid artisan quality at a more accessible price point.
What does Grass-Fed mean? The cattle were raised predominantly on grass and natural forage rather than industrial feed. Pasture-rearing produces meat with a more intense aromatic profile, less surface fat and a more balanced composition than intensive farming.
What cooking is recommended? Rare or medium — cast iron pan or glowing grill, 2-3 minutes per side, obligatory resting time before cutting. Raw for carpaccio. Grass-fed beef has less surface fat — quick cooking is essential.
How should it be stored after delivery? Vacuum-sealed and unopened: 5-7 days in the refrigerator at 0/+4°C. Can be frozen immediately on receipt — defrost in the refrigerator 24 hours before cooking.
