What is the difference between guanciale and pancetta or bacon? Guanciale comes from the pork cheek, pancetta from the belly, and bacon is typically smoked back or belly. Guanciale has a more compact fat structure and a more intense aromatic profile. During cooking, its fat renders differently - more slowly and with greater release of flavour - making it irreplaceable in recipes such as carbonara and amatriciana. It is never smoked.

Can I eat it uncooked as well as using it in cooking? Yes - Tuscan Guanciale Stagionato is also excellent enjoyed on its own, sliced thinly on unsalted Tuscan bread. The 3-month curing makes it a complete charcuterie product, not merely a cooking ingredient.
