The Chianina fillet is a cut that rewards simplicity. The more you intervene, the more you obscure the quality of the raw material.
Temperature before cooking. Remove from the refrigerator at least 30 minutes before cooking. Fridge-cold meat cooks unevenly — the outside burns while the inside stays raw. At room temperature the cooking is uniform.
In the pan — the most precise method. Cast iron or steel pan brought to maximum heat. No oil in the pan — just a drizzle on the meat. 2 minutes per side for rare, 3 minutes for medium. Rest 2 minutes before cutting. Coarse salt and black pepper only at the end.
