🐂 The Chianina — Why This Breed Changes Everything
The Chianina is the oldest and largest cattle breed in the world — originating from the Tuscan Valdichiana, raised on this land for over two thousand years. Up to 180cm tall and 1,700 kg in weight: no cattle breed in the world surpasses it in stature. But it is not the size that makes it extraordinary — it is the meat.
Chianina produces meat with unique characteristics: longer and finer muscle fibres than common beef breeds, a white and compact surface fat, a natural internal marbling that guarantees tenderness and succulence even without forced marinades or ageing. It is the beef the Florentines have used for the Bistecca alla Fiorentina for centuries — and the fillet is its most refined cut.
The IGP VBAC certification — Vitellone Bianco dell'Appennino Centrale — guarantees that every piece comes from cattle of the white Apennine breeds (Chianina, Marchigiana, Romagnola) raised in the certified Apennine area, slaughtered before 24 months of age and selected according to the European production rules. Not a decorative label — a guarantee verified by independent bodies.

🔥 How to Cook Chianina Beef Fillet at Its Best
The Chianina fillet is a cut that rewards simplicity. The more you intervene, the more you obscure the quality of the raw material.
Temperature before cooking. Remove from the refrigerator at least 30 minutes before cooking. Fridge-cold meat cooks unevenly — the outside burns while the inside stays raw. At room temperature the cooking is uniform.
In the pan — the most precise method. Cast iron or steel pan brought to maximum heat. No oil in the pan — just a drizzle on the meat. 2 minutes per side for rare, 3 minutes for medium. Rest 2 minutes before cutting. Coarse salt and black pepper only at the end.
On the grill. Glowing grate, live embers. Same principle: high heat, short time, obligatory resting. The Chianina needs no marinades — its intramuscular fat is the natural seasoning.
Carpaccio. The Chianina IGP fillet is the ideal cut for carpaccio: pounded paper-thin raw, rocket, shards of Cave-Aged Pecorino Stagionato, Tuscan extra virgin olive oil and lemon. The natural tenderness of the Chianina makes it unrivalled raw.
The golden rule: salt, pepper, Tuscan extra virgin olive oil. Three ingredients. The Chianina does the rest.

🧠 FAQ — Chianina Beef Fillet IGP VBAC
What is Chianina Beef Fillet IGP VBAC? The most refined cut of the Vitellone Bianco dell'Appennino Centrale — the European IGP certification for the white Apennine breeds, including the Tuscan Chianina. 250g fillet, vacuum-sealed, delivered at controlled temperature directly from Tuscany.
What does IGP VBAC mean? IGP VBAC stands for Indicazione Geografica Protetta — Vitellone Bianco dell'Appennino Centrale. The European certification guarantees breed (Chianina, Marchigiana or Romagnola), rearing territory in the certified Apennine area and slaughter age under 24 months. Every piece is traceable and verified by independent bodies.
What cooking is recommended? The Chianina IGP fillet is ideal rare or medium — cast iron pan or glowing grill, 2-3 minutes per side, obligatory resting time before cutting. Raw for carpaccio or tartare. Never well done: the natural tenderness of the Chianina is lost with prolonged cooking.
How should it be stored after delivery? Vacuum-sealed and unopened: 5-7 days in the refrigerator at 0/+4°C. Can be frozen immediately on receipt — defrost in the refrigerator 24 hours before cooking, never at room temperature.
