To guarantee consumers the certainty of a product of superior quality and guaranteed, animals must have the indelible tattoo approved by the farmers and the slaughterers' mark.
The treatment, separated from fresh legs (frozen legs are not allowed), can only be carried out in the Tuscany Region.
Salting is done dry with the empire of marine sales, pepper and natural aromas typical of the region. The resulting flavor is that characteristic of the already famous Tuscan ham.

Controls on all production are managed by a control body authorized by the Ministry of Agriculture and Forestry.
