Remove from the refrigerator at least 30 minutes before serving. At room temperature the seasoned fat releases its full aromatic profile — cold from the fridge the porchetta is flat.

To revive the crackling: heat in the oven at 180°C for 8-10 minutes uncovered. The skin regains its original crispiness. Alternatively, one minute under the grill — keep an eye on it to avoid burning.

The Tuscan way: thick slices on unsalted Tuscan bread, with a drizzle of extra virgin olive oil. In the Florentine tradition only coarse salt is added — nothing else. The porchetta speaks for itself.
