Tuscan Finocchiona IGP online — Artisan Fennel Salami | Protected Geographical Indication | Vacuum Packed | Refrigerated Delivery 24/48h | Directly from Siena
Buy Tuscan Finocchiona IGP directly from Salumeria Toscana — one of the most iconic and beloved Italian charcuteries, produced in Tuscany from selected Italian pork, flavoured with wild fennel seeds and slow-cured according to the ancient Florentine tradition. Protected by the IGP certification since 2015, the Finocchiona is the undisputed queen of any Tuscan charcuterie board.
What is Finocchiona IGP — Tuscany's Queen of the Charcuterie Board
Finocchiona is one of the oldest and most distinctive Italian salamis. Its origins date back to medieval Tuscany, when fennel — abundant in the Florentine countryside — was used as an alternative to black pepper, which was expensive and difficult to obtain. The result was a salami with a softer, more yielding texture than traditional salami, with an unmistakable aromatic profile built on the sweetness of wild fennel.
The IGP certification — Indicazione Geografica Protetta — guarantees that every Finocchiona is produced in Tuscany from Italian pork, with wild fennel seeds, following a controlled and verified production protocol. It is the certification that distinguishes an authentic Finocchiona from imitations.
The texture is what immediately sets it apart: softer and more crumbly than any other Italian salami — hence the name "sbriciolona" (the crumbly one) in some local dialects. At room temperature, the fat softens and the fennel aroma releases fully, making every slice a different experience from hard salami.

How to serve Finocchiona IGP at its best
Temperature: always bring Finocchiona to room temperature at least 20–30 minutes before serving. Cold Finocchiona loses half of its fennel aroma and its characteristic crumbly texture becomes rubbery.
Slicing: slice thick — 3–4 mm — unlike hard salamis. Finocchiona sliced too thinly loses its soft, yielding texture and breaks apart. A slightly thicker slice lets the fat and fennel aromatics express themselves fully.
On the board: unsalted Tuscan bread (pane sciocco) is essential. The bread's neutral flavour is the only accompaniment that doesn't compete with the fennel profile. Aged Pecorino Toscano alongside is the classic Florentine combination.
In cooking: Finocchiona IGP is exceptional in focaccia, on pizza (add after baking, not before), or roughly torn into a salad of bitter leaves with walnuts and a sharp dressing.

FAQ — Finocchiona IGP
What is Finocchiona IGP? Finocchiona IGP is a certified Tuscan salami produced exclusively in Tuscany from selected Italian pork, flavoured with wild fennel seeds. The IGP certification guarantees its Tuscan origin and traditional production method. It is immediately recognisable by its softer, more crumbly texture compared to other Italian salamis, and its distinctive fennel aroma.
Why is Finocchiona different from other Italian salami? The key difference is the fennel: wild fennel seeds replace the black pepper used in most Italian salamis, creating an aromatic profile that is uniquely Tuscan. The texture is also markedly softer — Finocchiona is sometimes called "sbriciolona" (the crumbly one) because it breaks apart when handled rather than holding firm like harder salamis.
How is it best stored? Vacuum packed and intact: in the refrigerator at 0–4°C until the use-by date on the label. Once opened: keep refrigerated covered with food wrap, consume within 5–7 days. Slice as needed rather than slicing the whole piece at once.
