Ragù di Cinta Senese DOP is the pasta sauce of authentic Tuscan tradition — made by La Dispensa Toscana with 50% pork from the Cinta Senese DOP, the indigenous Tuscan breed recognised by the European Union with the Protected Designation of Origin. Slow-cooked with tomato, soffritto of onion, carrot and celery, wine and extra virgin olive oil, it produces a sauce with a rich, structured and persistent flavour that turns a plate of pasta into a genuine gastronomic experience.

Cinta Senese is one of the oldest pig breeds in Italy — already depicted in Ambrogio Lorenzetti's 1338 frescoes in the Palazzo Pubblico di Siena. Raised semi-wild in Tuscan forests and pastures, its meat is characterised by superior natural marbling and white, sweet, aromatic fat that melts slowly during cooking. 🍝 How to use it in the kitchen

Heat the ragù over low heat for 3–4 minutes stirring gently, no water needed. Cook the pasta very al dente, drain and toss directly in the pan with the sauce for 30 seconds off the heat, adding a ladle of pasta water to bind. The ideal format is Pici Toscani — the hand-rolled pasta most typical of the Sienese tradition — but it works beautifully with tagliatelle, pappardelle, rigatoni and fresh egg pasta.

One 180g jar serves 2 generous portions. For an even richer result: stir in a knob of butter off the heat and finish with a generous grating of Pecorino Stagionato in Grotta.
