Tuscan fresh sausage is one of the most deeply rooted products of the Italian charcuterie tradition — and the artisan version and the industrial one are two completely different things. Salsiccia Toscana is produced in the countryside of the province of Siena by selected artisans following the traditional Sienese recipe: selected Tuscan pork, fennel seeds, black pepper and garlic, stuffed into natural casings without artificial preservatives or additives. 500g, 5 sausages, vacuum-packed and shipped under controlled temperature directly from Tuscany.

🐖 What makes artisan Tuscan sausage different

Industrial sausage contains dextrose, glutamate, artificial flavourings, nitrates and often recovered meat. The traditional Sienese recipe contains four things: selected pork, fennel seeds, black pepper, garlic. That is all. The difference is clear from the first bite — a coarse texture with distinguishable pieces of meat, a white fat that melts during cooking without releasing watery liquid, a clean aromatic profile where fennel, pepper and garlic are each recognisable but never aggressive.

It is the fennel seasoning that makes Tuscan sausage immediately recognisable from sausages of other Italian regions — a sweet, aromatic fragrance that opens fully with the heat of cooking and permeates the entire meat. Not a background spice: the signature of the territory. The natural casing — not synthetic — completes the picture: during grilling it contracts naturally around the meat, keeping it succulent and developing that crispy skin that artificial casing cannot replicate.

🔥 How to cook Tuscan sausage — three methods

🔥 On the grill — the classic Tuscan method — live coals, not direct flame. Medium heat, not high: the sausage must cook slowly so the internal fat dissolves gradually without burning the casing. Do not pierce beforehand — the juices must stay inside. Turn regularly every 2–3 minutes. 15–20 minutes depending on thickness. Ready when the casing is golden and lightly crispy all around.

🍳 In a pan — medium-low heat, a splash of Tuscan extra virgin olive oil, a sprig of fresh rosemary. Same rule: do not pierce, turn often. Add half a glass of Tuscan white wine halfway through and let it reduce — the wine deglazes the pan and adds an acidity that balances the fat of the sausage. 20–25 minutes total.

🍝 For Tuscan sausage ragù — remove the sausage from the casing and crumble it directly into a hot pan with garlic and olive oil. Brown at high heat until golden, add chopped onion and soften, deglaze with red wine and add peeled tomatoes. Sausage ragù is one of the most flavourful sauces of the Sienese tradition — ideal on pici or pappardelle, ready in 25 minutes.

For the classic salsicce e fagioli — brown the sausages whole in a pan with garlic and sage, add Tuscan cannellini beans, crushed tomatoes and Tuscan extra virgin olive oil. Simmer 20 minutes. What is salsiccia toscana?
Salsiccia toscana is a Tuscan fresh sausage made from selected Tuscan pork seasoned with the traditional artisan recipe of fennel seeds, black pepper, garlic and sea salt, stuffed into natural casings without artificial preservatives. The fennel seasoning is what makes it instantly recognisable from sausages of other Italian regions.

How many sausages are in the pack?

Should I pierce the sausages before cooking?
