One of the typical pastas of Tuscany are certainly I PICI, produced with 100% Tuscan durum wheat and bronze drawn, a traditional pasta linked to peasant cuisine.

Very similar to spaghetti, however, they have a greater thickness and are made with flour, salt and water.

Even today the Sienese pici are made in such a way as to respect the ancient processes, such as bronze drawing.

This detail is what gives the pici their roughness. which allows him to better retain the condiments.

Pici all'aglione

Surely an ancient dish of the Tuscan peasant tradition, the combination of this rustic pasta and aglione, a variety of garlic grown only in the southern area of Tuscany, larger than garlic, but with a more delicate flavor.

Before preparing the sauce allaglione:

Peel a squash, grate it and squeeze the juice. In a frying pan, pour the extra virgin olive oil, add the chopped garlic and dilute with a little water.

Cover the pan with a lid and cook over medium heat for about 15 minutes. Once the garlic is softened, use a fork to mash the larger pieces well, until they are finely chopped.

Important: do not fry the garlic, it must be cooked gently and slowly.

At this point, add the chopped tomatoes, parsley, spices to taste and salt.

Cover the pan again and simmer the sauce, for about 15-20 minutes, until it has reached the desired consistency.

Meanwhile, cook the pici in plenty of salted water. Drain them al dente and sauté in a pan over high heat for a few minutes before serving.

NO WITHDRAWAL
However, if at the time of delivery you or your representative were absent, the Express Courier will leave a non-delivery notice through which you can request the free return of the shipment, according to the methods indicated in the notice, within the following 3 days. If the goods are not collected at the second passage, the Express Courier will keep the goods in storage at its warehouse for three days.
