The Pecorino Rosso Colline Maremmane is an artisanal cheese made from pasteurized sheep's milk. In the Tuscan tradition, small pecorinos are briefly matured to enhance the sweetness of the milk without sacrificing personality. This mini pecorino of about 300 g has a white and compact paste and a scent reminiscent of the Mediterranean scrub. The outer rind is treated with natural ingredients that give it an intense red color, but it is not edible.

Produced in the Maremma Hills, a hilly area south of Tuscany, the cheese is aged for about 40 days. The processing includes vacuum packaging to preserve freshness and aromas and packing in cardboard trays. On the table, the mini pecorino rosso stands out for its delicate yet distinctive taste, making it ideal both as a table cheese and as an ingredient in Tuscan recipes.

Storage and usage advice

To best preserve the Mini Pecorino Rosso, keep it between 2 °C and 4 °C in a cool, dry place (< 90% humidity). After opening, wrap the cheese in food paper or cling film and store it in the refrigerator to preserve its aromas and texture. The minimum shelf life is 120 days from the packaging date.

It is a perfect table cheese after removing the rind. It can be enjoyed alone, with rustic bread, acacia honey, or fig jams. Thanks to its delicate taste, it pairs well with Tuscan cured meats and can enrich salads, savory pies, or pasta dishes. It goes well with a fresh white wine or a light rosé.

Why choose it

  • Tuscan craftsmanship: each mini pecorino is produced by expert cheesemakers from Maremma, preserving the local tradition.

  • Practical size: the 300 g format is ideal for tastings, aperitifs, or gourmet gifts.

  • Unique taste: the short aging enhances the delicacy of sheep's milk without giving up a distinctive note.

  • Safety and quality: microbiological checks guarantee the absence of Listeria monocytogenes and very low levels of coliforms and E. coli.

TUSCANY

A Tradition

It may be that the Tuscans are not like the oxen, who see everything in a big way: but it is certain that they never lose sight of the extent of the world, and the clear and secret relationships between men and nature.
