🥂 Maschio dei Cavalieri Valdobbiadene Prosecco Superiore DOCG Millesimato Extra Dry is a sparkling wine made from Glera grapes grown in the best sites of Conegliano and Valdobbiadene, the Prosecco Hills listed as a UNESCO World Heritage Site. It comes from Dei Cavalieri, the range Cantine Maschio created in 1984 for restaurants and bars: a fresh, soft Prosecco Superiore with aromas of acacia and candied citron, perfect as an aperitif and with fish.

In the glass it is straw yellow with greenish hints, with a white, creamy mousse and fine, persistent bubbles. On the nose, acacia blossom, golden apple and candied citron; on the palate it is full, fresh and soft, with an Extra Dry dosage that makes it harmonious and easy to drink. Why a Prosecco in a Tuscan salumeria? Because its bubbles refresh the palate after every slice of prosciutto or salami and carry an aperitivo from start to finish.

🍽️ How to serve it
Serve at 6–8 °C, as the producer recommends, ideally in a tulip-shaped glass: compared with a narrow flute, it lets the floral and fruit aromas come through. Chill the bottle in the fridge for a few hours before opening and store the others lying down, somewhere cool and dark. Like all Prosecco, it is at its best when young.

A Valdobbiadene Prosecco Superiore DOCG Extra Dry made from Glera grapes by Cantine Maschio under the Dei Cavalieri label. Millesimato means that at least 85% of the grapes come from a single harvest, stated on the label.
What is the difference between Extra Dry and Brut?
Extra Dry is softer than Brut: this Prosecco has 14 g/l of residual sugar, while a Brut has less than 12. So, despite the name, Extra Dry is less dry than Brut.
What is the difference between Prosecco DOC and Prosecco Superiore DOCG?
Prosecco DOC is made across a large area of Veneto and Friuli Venezia Giulia. Prosecco Superiore DOCG comes only from the hills between Conegliano and Valdobbiadene, in the province of Treviso, under stricter production rules.
