Description  

To produce this Cinta Senese cured meat, the selected cuts of the Cinta Senese pig are used, which for processing are:

boneless and defatted shoulder, trimmings of ham, traculo, throats, lean bacon and throat, coppa meat, pancetta and pancettone.
 

The sbriciolona di cinta senese is produced thanks to a balanced ratio between fatty meat and lean meat, minced together and mixed with fennel seeds.
