Chianti Tuna is one of the most original specialities of Tuscan peasant cooking: despite the name, it contains no fish whatsoever. It is pork loin slowly cooked for around five hours in white wine, herbs and spices, then preserved submerged in extra virgin olive oil. The result is an extraordinarily tender meat with a delicate flavour — so similar in texture and appearance to tuna in oil that the Chianti farmers gave it this name centuries ago.
🐷 Why is pork called "tuna"?
The recipe was born from necessity. Before refrigerators existed, Chianti farmers needed a way to preserve meat through the summer months. The long cooking in wine and herbs, followed by immersion in olive oil, completely transforms the pork loin: it becomes flaky, soft and delicate — identical to canned tuna in texture. The name stuck, unchanged for centuries.
