The maturation of the pork loin varies from 50 to 60 days. Lonzino is a refined salami for its soft, delicate flavor and its thinness.


It stands out from other cured meats for its pink color, and the small content of adipose tissue and connective tissue makes the meat soft, for this reason loin is an excellent cured meat for simple but very fine dishes, primarily carpaccio.
