Chianina steak IGP 

The Florentine Chianina IGP VBAC is the Florentine steak par excellence, the most sought-after cut of meat in the world, and the Chianina beef is the king of Tuscan meat.

The Chianina steak is certified by the IGP mark and by the VBAC mark (central Apennine white calf) which provides its quality and origin.

Fiorentina

The term refers to the cut of meat (the famous T with bone) and the cooking rare, so beware of those who propose Bistecca alla Fiorentina without specifying the origin of the meat, which will certainly be France / Italy and not Tuscany.

Another important aspect is the aging of the Chianina meat: we guarantee a minimum of 30 days, up to a maximum of 60 days on request.

 The maturation means the degree of maturation of the Tuscan meat, and is directly proportional to the softness of the Chianina meat: the more it is aged, the softer and more valuable it will be.

The calves of the Chianina breed are  born, raised and slaughtered in Tuscany.
