Finocchiona IGP is compact, has a long ageing and a texture that holds up to thin slicing. Sbriciolona is its complementary opposite: coarse grind, short ageing, soft and crumbly texture — it literally "crumbles" at the touch, hence the name. You do not slice it with a knife in the classic sense: you open it, break it into irregular pieces, and place it on the board as nature intends.

Sbriciolona is not served like other cured meats — it has its own precise ritual that respects its crumbly nature.

Step 1 — Resting outside the fridge
Take the Sbriciolona out of the vacuum at least 20–30 minutes before serving. Like Finocchiona, wild fennel seeds only release their essential oils at room temperature — cold, the aroma is almost absent; at 18–20°C it becomes intoxicating.

Step 2 — Opening
Do not slice Sbriciolona with a meat slicer — you would destroy it. Use a sturdy knife to cut the piece in half, then break the portions with your hands or a fork. The crumbly texture is its main characteristic: go with it, not against it.

Step 3 — Serving on the board
Arrange the irregular pieces of Sbriciolona on a wooden board together with Tuscan unsalted bread — the salt-free bread of the Sienese tradition is the only one that does not compete with the fennel.
