Vegetarian Pecorino: Thistle Rennet Explained and How to Choose It

Is pecorino vegetarian? Not always. Most traditional cheeses, including pecorino, are coagulated with animal rennet, an enzyme obtained from the stomachs of lambs or calves. Those who follow a vegetarian diet therefore look for cheeses made with vegetable or microbial rennet. In Tuscany, there is an ancient alternative: thistle rennet.

What is thistle vegetable rennet?

Vegetable rennet is obtained from the dried flowers of the wild thistle (Cynara cardunculus). When infused, the pistils release enzymes capable of coagulating milk, just like animal rennet. It is a technique that has been used for centuries in Mediterranean countries and gives the cheese a softer texture and a slight bitter aftertaste, typical of thistle.

How to recognize a vegetarian pecorino

  • Read the label: it must state "vegetable rennet", "plant-based coagulant", or "microbial". The word "rennet" alone usually indicates animal rennet.
  • Even for PDO cheeses, always check the type of rennet declared by the producer.
  • If in doubt, ask the dairy or shop directly.
