The Chianina is the oldest and largest cattle breed in the world, originating from the Tuscan Valdichiana. 🔥 How to Cook Chianina Beef Stew at Its Best
Chianina stew rewards patience. Slow cooking is the only method that transforms the chunks into something extraordinary.
The sear — the step you never skip. Cast iron or steel pan at high heat, a drizzle of Tuscan extra virgin olive oil. Brown the chunks in small batches — a few pieces at a time — until a crust forms on all sides. The crust seals the juices inside. Without searing the stew boils rather than braises.
