🔥 How to Cook Tuscan Grass-Fed Beef Fillet at Its Best

Grass-fed beef fillet rewards simplicity. The less you intervene, the more the meat expresses its character.

Temperature before cooking. Remove from the refrigerator at least 30 minutes before cooking. Fridge-cold meat cooks unevenly. At room temperature the cooking is uniform.

In the pan — the most precise method. Cast iron or steel pan brought to maximum heat. A drizzle of Tuscan extra virgin olive oil on the meat, not in the pan. 2 minutes per side for rare, 3 minutes for medium. Rest 2 minutes before cutting. Coarse salt and black pepper only at the end.

On the grill. Glowing grate, high heat, short time, obligatory resting. Grass-fed beef has less surface fat — quick cooking is essential to avoid drying out the meat.

Carpaccio. Pounded paper-thin raw with rocket, shards of Cave-Aged Pecorino Stagionato, Tuscan extra virgin olive oil and lemon. The natural tenderness of the fillet makes it outstanding raw.

The golden rule: salt, pepper, Tuscan extra virgin olive oil. The meat does the rest.
