Artisan Tuscan Frankfurters: pork in natural casing, 350 g
Artisan frankfurters are pork sausages stuffed into natural casing: they cook in 8-10 minutes on the grill, in a pan or in water, and both adults and children love them. Ours come from Salumificio Poggetto, on the plain around Prato, the same producer as our Tuscan sausage. The 350 g vacuum pack contains 4-5 frankfurters and costs €6.30.
🐷 Why natural casing makes the difference
Industrial frankfurters almost always come in synthetic casing, which holds the shape but plays no part in the cooking. Natural casing, on the other hand, shrinks together with the meat: on the grill it turns crisp and gives that little snap when you bite into it, while inside the juices stay where they belong.
The filling is different from the supermarket kind, too: pork with a compact texture, not a uniform paste.

🔥 How to cook artisan frankfurters
- On the grill: lightly score the casing in 2-3 places, then cook for 8-10 minutes over medium embers, turning them often, until golden.
- In a pan: a drizzle of oil, medium heat, 6-8 minutes, turning them on all sides.
- In water: bring it to the boil, lower the heat and leave them in for 8 minutes without letting it boil hard, so the casing doesn't split. For a more delicate flavour, use half water and half white wine.
- Serve them with mustard, roast potatoes or sauerkraut, or in a bread roll for a quick sandwich.
