Finocchiona is one of the oldest and most distinctive Italian salamis. Its origins date back to medieval Tuscany, when fennel — abundant in the Florentine countryside — was used as an alternative to black pepper, which was expensive and difficult to obtain. The result was a salami with a softer, more yielding texture than traditional salami, with an unmistakable aromatic profile built on the sweetness of wild fennel.

How to serve Finocchiona IGP at its best

Temperature: always bring Finocchiona to room temperature at least 20–30 minutes before serving. Cold Finocchiona loses half of its fennel aroma and its characteristic crumbly texture becomes rubbery.

Slicing: slice thick — 3–4 mm — unlike hard salamis. Finocchiona sliced too thinly loses its soft, yielding texture and breaks apart. A slightly thicker slice lets the fat and fennel aromatics express themselves fully.

On the board: unsalted Tuscan bread (pane sciocco) is essential. The bread's neutral flavour is the only accompaniment that doesn't compete with the fennel profile. Aged Pecorino Toscano alongside is the classic Florentine combination.

In cooking: Finocchiona IGP is exceptional in focaccia, on pizza (add after baking, not before), or roughly torn into a salad of bitter leaves with walnuts and a sharp dressing.
