The production of our Aged Cured Ham begins with artisan massage salting - a manual, repeated and vigorous process that allows the salt to penetrate deep into the meat fibres. After resting in refrigerated cells, the ham is seasoned with pepper, natural aromas and selected spices, then transferred to well-ventilated rooms for curing.
