Chianti Tuna — Tuscan Pork in Olive Oil, La Dispensa Toscana

Chianti Tuna is one of the most original specialities of Tuscan peasant cooking: despite the name, it contains no fish whatsoever. It is pork loin slowly cooked for around five hours in white wine, herbs and spices, then preserved submerged in extra virgin olive oil. The result is an extraordinarily tender meat with a delicate flavour — so similar in texture and appearance to tuna in oil that the Chianti farmers gave it this name centuries ago.

🐷 Why is pork called "tuna"?

The recipe was born from necessity. Before refrigerators existed, Chianti farmers needed a way to preserve meat through the summer months. The long cooking in wine and herbs, followed by immersion in olive oil, completely transforms the pork loin: it becomes flaky, soft and delicate — identical to canned tuna in texture. The name stuck, unchanged for centuries.

❓ FAQ

Does Chianti Tuna actually contain fish? No. It is pork loin slowly cooked in white wine, herbs and spices, then preserved in olive oil. The name "tuna" comes from the texture of the meat after the long cooking and maceration — tender and flaky, just like canned tuna in oil.

Is it gluten-free? Yes. Chianti Tuna by La Dispensa Toscana is gluten-free, as stated on the label.

How should I store it after purchase? In the refrigerator at 0–4°C in the original vacuum-packed jar. After opening, consume within 5–7 days, keeping it covered in olive oil in the fridge.

How do I eat Chianti Tuna? The simplest way: pulled apart by hand on white beans with onion and olive oil. Or on toasted bread as a starter. Also excellent as a pasta sauce or salad topping.

Is it suitable as a Tuscan food gift? Absolutely — it is one of the most original Tuscan specialities and almost impossible to find outside the region. Ideal in a gift box with Pecorino and Tuscan olive oil.
