🍷 Perusini Ribolla Gialla is a still white wine, Friuli Colli Orientali DOC, from the Ronchi di Gramogliano range of Azienda Agricola Perusini, made on the Gramogliano hill at Corno di Rosazzo (Udine). It is made from Ribolla Gialla, the native grape that is the emblem of Friuli, grown on ponca soils: a savoury, full white with a long saline finish, perfect as an aperitif and with fish.

In the glass it is pale, bright yellow with green hints. On the nose, pear and green apple; on the palate it is savoury, full and complex, with the long saline finish typical of whites from the Gramogliano hill. Why a Friulian white in a Tuscan salumeria? Because its freshness and savoury character are a perfect match for prosciutto crudo and the more delicate cured meats.

🍽️ How to serve it
Serve at 10–12 °C in a medium-sized white wine glass: cool enough to bring out its liveliness, but not so cold that it masks the fruit. Put the bottle in the fridge a couple of hours before opening, and store the others lying down, somewhere cool and dark.

What kind of wine is Perusini Ribolla Gialla?

Is it a still or a sparkling wine?
This is the still version. Perusini also makes a sparkling Ribolla Gialla, but this bottle is a still white, fermented in steel and aged on the lees.
What is ponca?
Ponca is the Friulian name for Eocene marl, a fossil-rich clay typical of the Colli Orientali del Friuli. It is the soil in which the vines of this Ribolla Gialla grow.
