What is the difference between mixed caciotta and Tuscan Pecorino? The main difference lies in the raw material and ageing. Mini Caciotta Mista uses cow and sheep milk in blend with a short ageing of approximately 20 days — result: tender paste, delicate flavour, fresh milky notes.
