🔥 How to Cook the Tuscan Ribeye at Its Best
The Tuscan ribeye on the fire is a ritual — not a recipe. A few rules, all essential.
Temperature before cooking. Remove from the refrigerator at least 45-60 minutes before. A thick bone-in steak cold from the fridge cooks badly: the outside burns before the inside reaches the right temperature. At room temperature the cooking is even from edge to bone.
Live charcoal — not gas. The Tuscan steak belongs on live wood or charcoal embers. The smoke of the fire enters the meat during cooking and adds an aromatic dimension that gas cannot provide. High embers, no flames.
Timings. For a 1kg ribeye with 3-4cm thickness: 5-6 minutes per side over high embers for rare. For medium add 2 minutes per side. Stand it on the bone for 2-3 minutes at the end — this cooks the bone-side which always stays rarer.
