Artisan sausages require slightly longer cooking than industrial ones. This is not a flaw โ it is the direct consequence of quality. 100% pork without starches needs sufficient heat to cook through properly from the inside.

Why do they require longer cooking?
Industrial sausages contain starches and binders that artificially accelerate cooking. Should I pierce the casing before cooking?
