Tuscan Sbriciolona: the Finocchiona that cannot survive a knife

Sbriciolona Toscana is the extreme version of Finocchiona IGP: a salume so soft, so crumbly, that it cannot be sliced with a knife in the conventional sense — it falls apart. The name itself tells the story: sbriciolare in Italian means "to crumble". And the Sbriciolona crumbles on purpose. This is not a flaw — it is its identity.


What is Tuscan Sbriciolona

Sbriciolona is a Tuscan salume made from pork and wild fennel seeds, similar in composition to Finocchiona IGP. But while Finocchiona ages at least 45 days, Sbriciolona ages only 25–30 days with a higher fat content. The result: an extremely soft salume that falls apart at the first touch of a knife. It is a regional PAT product, not an IGP like Finocchiona.

❓ FAQ

Why can't it be sliced like other salamis?
Because of the higher fat content and shorter ageing: the fat melts at room temperature and the salume falls apart. This is not a defect — it is the product's identity.
