Pecorino Toscano DOP is a hard or semi-hard cheese produced exclusively from whole milk from sheep grazing on certified Tuscan pastures, according to a European product specification controlled by the Protection Consortium. The Stagionato version requires a minimum ageing of four months. 🧀 The Three Signals of Genuine DOP Stagionato

1. DOP stamp on the rind. The Consortium issues the mark only after verifying milk, zone and ageing. "Pecorino Toscano" without DOP is legally different: it can be produced anywhere in Tuscany from milk of any origin.

2. White crystals in the paste. Those white specks are tyrosine crystals — not a defect: they are the most reliable marker of long, natural ageing. You find them in great aged Italian cheeses — Parmigiano Reggiano 30 months, mature Pecorino Sardo, Piave Vecchio.

3. Colour and compactness of the paste. Authentic DOP Stagionato has an intense straw-yellow paste, not white. The texture is granular and breaks into irregular flakes with the tip of a cheese knife.

Serving temperature: 17–18 °C. Take the pecorino out of the fridge at least 40–45 minutes before tasting. Chilled, the cheese is flat, fatty in the mouth, without complexity. At room temperature it releases the complete bouquet — pasture, dried herbs, fermented dairy notes, mineral finish.

Cut: flakes, not slices. Insert the tip of a cheese knife into the paste and lever out irregular flakes. Even slices are wrong: they waste the characteristic granular texture and have less contact surface with the palate.

Airing after vacuum-packing. If you receive the cheese vacuum-sealed, open it and let it breathe for 15 minutes before the first taste.

What is the minimum ageing for PDO Stagionato?
Four months is the minimum threshold set by the European product specification. 8- and 12-month versions exist and have an even harder paste, more tyrosine crystals and a more concentrated aromatic profile.

Are the white crystals safe to eat?
Yes, absolutely. They are tyrosine crystals — not salt, not mould, not a defect: they are the marker of authentic ageing.

Why is the rind red?
The red rind is achieved with natural traditional treatments from the Maremma (oil and tomato, or oil and ash, depending on the producer) that protect the wheel during ageing and do not alter the taste of the paste.

Can it be grated like Parmesan?
Yes, but it is a waste for standard DOP Stagionato (4–6 months). For grating, the Gran Riserva 12 months is better suited.
