The "Chianti Classico" DOP oil must be produced exclusively with olives from olive groves, registered in the register, consisting for at least 80% of plants of the "Frantoio", "Correggiolo", "Moraiolo", "Leccino" varieties, alone or jointly, and a maximum of 20% from plants of other varieties present in the register.

The oil, of an intense green color, has its strong point in the clear fruity aromas, as well as for a higher than average percentage of oleuropein and chlorophyll, an antioxidant substance.
