What is Tuscan Wild Boar Ragù

Tuscan Wild Boar Ragù is a sauce made from wild boar meat (not farmed), coarsely minced and slowly simmered with soffritto (onion, carrot, celery), red wine, crushed tomato, olive oil and aromatic herbs (rosemary, bay leaf, juniper). Characterised by intense, gamey flavour, dark colour and a well-balanced acidity from the wine and tomatoes.


How It Is Made by Dispensa Toscana

Dispensa Toscana produces wild boar ragù in Tuscany with 60% wild boar meat from free-living animals hunted in approved zones according to Italian hunting law. The meat is coarsely minced and simmered 3–4 hours at low heat with Tuscan red wine and crushed tomatoes. No preservatives: sterilisation alone guarantees 24 months shelf life at room temperature in the sealed jar.

With Pici

The classic Tuscan pairing. Pici are thick and irregular — ideal for capturing pieces of meat from the ragù. Heat ragù in a pan, add the cooked pici with a ladle of pasta water, toss for 1 minute. Serve with grated Cave-Aged Pecorino Stagionato.
