Ideal cooking of Fiorentina

To cook a Fiorentina to perfection It is very important to get a good cut of meat, well matured, at least 30 days, with a fairly evident marbling and a thickness of at least 4 centimeters.

Otherwise, according to the thickness, you can use the rule of 7, that is 7 minutes on one side, 7 minutes on the other and 7 minutes with the bone placed vertically on the grill.
